Tonight I prepped for ratatouille with a friend. Afterwards, my 1.5 yr old nephew helped me throw in the rainbow of chopped veggies. After this slow cooked for a couple hours we paired it with yesterdays crock pot lentil soup my sister made, and topped it with a piece of fresh homemade whole wheat bread gifted from my dad’s girlfriend.
Ratatouille is a traditional french dish. My dad is from France and it always brings me joy to embrace my french blood. Its super French to make good food and eat together as a family, to spend a long time at the table talking and enjoying each others company, and a bottle of wine of course… or two.
I’ve been quarantining on my family property back where I was raised. Three generations of family, animals, a friend, six acres, and lots of food make for an exceptionally fortunate place to be. Right now during this difficult time we are amplifying efforts to reduce waste, share and trade our resources and skills, and of course enjoy each others company.
Best part of making this meal was having a little one on my hip.. after the chopping of course! I think having children in the kitchen is super important. I was raised in the kitchen and it taught me to appreciate the ingredients, resources, labor, and love that goes into every meal.
Waste Reduction Efforts: No scraps were wasted in the process of making this meal. I’m excited to be saving all my peels and ends for a future homemade veggie broth!
